Dark chocolate sea salt caramel fudge
The sugary aroma hits you first, before a bite of this delicate fudge starts to dissolve. A thin stripe of salty caramel is just enough to offset the extraordinary sweetness, granting some balance to the over-the-top indulgent bite.
The offerings here are classics, and the fudge consistently ranks high in popularity. (Licorice is also a hot item.) Katie Lee featured treats from Cottage of Sweets in her Beach Bites show on the Cooking Channel last summer, driving above-average traffic into the store. That meant making more trays of fudge, something that’s done every couple of days as needed.
It starts with the cocoa base, then cream and butter are added – but the secret ingredient is the most basic. “What makes a difference is the water that’s added,” says Assistant Manager Luis Flores, who’s responsible for the fudge. “It depends on the weather.”
The gooey concoction is blended for about an hour, filled with its salty caramel interior layer, then laid on trays to set overnight before being sliced into squares that are just the right size to share – or not.
