Carlos Colimodio keeps busy behind the stately white marble bar at Seventh & Dolores in Carmel. He glides back and forth measuring meticulous portions of spirits and vigorously shaking a pair of martinis, then carefully ignites cherrywood chips for the signature smoked Old Fashioned – all while chatting with diners.
On Monday, Oct. 8, the veteran bartender faces off against Alvarado Street Brewery & Grill’s James Wall in the kickoff of the 7D Mixology Throwdown, a new monthly competition series at the slick steakhouse to showcase cocktail creativity and skills.
Weekly: How do you make your martinis?
Colimodio: It’s a tough one. Vodka or gin? Vermouth or no vermouth? With vodka, it shouldn’t have vermouth. With gin, it needs vermouth. Everything goes together, the pieces all fit together. But the recipe depends on the person, the customer. I want to make you a martini the way you want it.
Free pour or jigger?
I’m very specific. A jigger is going to give you the consistency. If you want to keep the same flavor, you need to use a jigger.
What’s your favorite spirit?
Tequila. I’m from Venezuela and we drink a lot of rum, but then I moved to Mexico and now I drink a lot of tequila. People used to see tequila as just a way to get messed up, but now people realize what tequila does with the flavors of the agave is very good. People see it as something special now.
Your favorite cocktail?
Margarita.
How about your favorite liquor to use in cocktails?
Vodka. It’s likable.
Most overrated spirit?
Irish whiskey. Canadian whiskey. They’re bland.
