Fine dining, casual counter service, pop-ups, food trucks, app ordering, home delivery – how we eat has become more diverse than ever. The definition of a restaurant is always evolving and so is the culinary career of chef Greg Delgadillo.
Delgadillo has worked in elite Michelin-starred kitchens, tried his hand at fast casual and, most recently, hosted pop-ups at Captain + Stoker and Cafe Lumiere. Now, he wants to bring the chef experience into your home.

Weekly: Tell us about Nonna.
Delgadillo: Nonna is going to be the bridge that brings restaurant-quality chefs to homes in Monterey County. I’m aiming to provide experiences that the client feels comfortable with: prepped meals, full service and even taking it all the way to dog food.
What’s it like working pop-ups and in homes instead of a restaurant?
Pop-ups and private chefing have allowed me to be my own chef. I handle everything from A to Z, giving me the opportunity to grow skills that working on a line doesn’t allow you to learn.
Who inspired you to get into cooking?
Growing up, I watched a lot of Food Network and that was the first layer of inspiration, but working with Justin [Cogley] at Aubergine is what really shot me forward when it came to inspiration.
Where do you get the inspiration for your menus?
I get most of my inspiration from philosophies my previous chefs have pounded into me: Taste is the only truth and the product is the only thing that matters. I use those words to build a menu.
