Short Rib Grilled Cheese Sandwich
Once upon a time, a couple of chefs at Cannery Row Brewing Co. got together to invent a sandwich. They wanted it to be big. They wanted it to be bold. They even wanted it to involve some new kitchen equipment. So Justin Robarge (current Executive Chef) and Daniel Furey (former Executive Chef) came up with the short rib grilled cheese and made it as large as possible by letting the cheese spill out and turn into round crispy flaps.
When I saw the price tag ($21.95) I wondered, how good could it be? Well, it’s packed thickly with tender short rib, and then come the toppings. Oven roasted tomatoes deliver sweetness and bring out acidity along with balsamic-glazed red onions. Arugula tossed in citrus vinaigrette adds a little bite, jalapenos scattered around add a lot. Tangy goat cheese brings dimension and mellows out the sharp and spicy heat, and then there’s the most distinguishing factor: crunchy provolone hanging out each side.
While it is a delicious grilled cheese masterpiece, the sandwich’s cost may also be influenced by its fame. Guy Fieri once featured it on his show Diners, Drive-Ins and Dives.
