When George Edwards of the Wine Market in Pacific Grove tastes a dish, he doesn’t sample one wine with it, he tries as many as six. That is his tried-and-true technique to decipher which wines best match which foods. When I walked in looking for local and affordable, he found me a great Chardonnay and a nice Cabernet for about $10 a pop, then proceeded to match my diet and budget to what he saw on the shelves at Nob Hill and Trader Joe’s. Here’s what the matchmaker spotted. The bottles listed run from as little as $6.99 (the Mirassous) to $12.99 (the Chalone Chardonnay).
