Like the beginning of the 2020 Democratic presidential race before the primaries, taco choices at these taquerias are numerous. But there are no primaries in Mi Tierra, which is a good thing because who would want to pit a charred citrusy al pastor against an old-school but crispy tripa taco? They’re both so overly qualified to be on one’s plate and held together by the same double tortilla method, topped with chopped onion and cilantro. Hell, pick them all.
