Chefs and butchers Jason Balestrieri and Kevin Hincks opened The Meatery with a little fanfare and facing quite a bit of skepticism. Broadway Avenue in Seaside was coming off a renovation project that stunted traffic flow from one direction. Parking in front of the shop was as scant as the guys Hanz and Franz try to pump up. And who wants to pay that much for a piece of meat? Ah, but The Meatery sources the richest, finest meats. Pasture-raised, USDA Prime, in-house, dry-aged – these are not empty buzzwords here. They age beef in the back and cut for the customer. They cure sausages. They offer specialty products and serve as a deli making sandwiches to order. The Meatery has inspired those looking to buy ethically and at a higher level of quality. In less than a year, it has become a destination.
