As one legend has it, the margarita was invented in a border town bar in 1938 for a particularly picky customer who could only drink tequila but didn’t want it straight. That same legend probably applied to that ’80s favorite, the tequila sunrise. No matter. Today Baja Cantina serves several renditions on the classic thirst-quenching margarita. Choices include the indulgent Cadillac margarita finished with a float of Grand Marnier, the organic partida with agave nectar and the pleasingly sweet and simple strawberry margarita.
