Is the moon made out of cheese? Probably not. Fortunately, there’s a Carmel institution that has searched and sifted through the world’s cheese-making traditions and curated them in one little shop. There are Manchegos, Parmesans, deeply funky Stiltons, proper Irish cheddars, truffle-inflected moliterno and even an ungodly collection of stinky soft Burgundian cheeses. Add to that a library of local and imported wines and Molinari cured meats, and any thoughts about the moon being made of cheese go out the window. Earth is pretty good at making cheese.
