Zarape means “decorative blanket or rug” in Spanish, but the more accurate translation here on Fremont Boulevard would be “magic carpet,” as in a vehicle ready to take eaters into the outer atmosphere of tastebud orbit by way of secret-recipe revelations including their carnitas (best in town), shrimp tacos (the soy butter formula is sensational) and the time-space-continuum-bending dish that is carne en su jugo. Directly translated, that’s “meat in its juice,” but like Zarape, it deserves a better interpretation: liquid bacon.
