Nak Won (which translates to “paradise”) has barbecue grills recessed into six of their tables, where customers can cook their own meats to taste. Every entree, including at lunch, comes with a medley of seven or so accompanying banchan side dishes. They serve up Korean libations like soju rice wine and a ginseng-based alcohol drink. Their most popular dishes—spicy pork, kalbi short rib, bibim bap (two ways, cold or hot)—convince customers to return again and again, to dine in the spartan decor or for take-out…maybe even to try riskier fare like the new cow intestine soup. The Choi family has been in the business, here and elsewhere, for more than 20 years. That all lends the restaurant the super ability to survive and thrive, year after year, in the competitive restaurant ecosystem. That’s an ability we call staying power.
