Francis, along with other lovers of swine, describe the kurobuta pork he uses as the “Kobe beef of pork,” referring to the most highly prized pigs in Japan – the black Berkshire that originated in Berkshire County in the U.K. Here’s a cheeky tip or two for Butch and his believers: The Japanese prefer the word wiener over sausage and the Italian word for “cheers” (cin cin pronounced chin chin) is slang for human sausage in Japan!
